Ingrediants:

  • 420g can baked beans in tomato sauce
  • 2 eggs
  • 1/2 cup milk
  • 2 & 1/2 tablespoon extra virgin olive oil
  • 1 & 1/4 cups self-raising flour
  • 1 teaspoon mild curry powder
  • 1 teaspoon fine salt
  • 1 tablespoon olive oil
  • 8 rashers bacon, rind removed
  • 1 avocado, flesh dices, to serve
  • Coriander leaves, to serve

Steps:

  1. Drain beans in a sieve over a bowl, reserving sauce. Put eggs, milk amd extra virgin olive oil in a large bowl and whisk until smooth. Stir in flour, curry powder, salt and drained breans.
  2. Heat olive oil in a large frying pan over a high heat. Cook 1/3 cupfuls of the mixture, in batches, for 2 minutes on each side or until golden-brown. Set side.
  3. Reduce heat to medium. Add bacon and cook for 5 minutes or until browned. Spread reserved sauce on serving plates. Top with stacked fritters and serve with bacon, avocado and coriander.
