Ingrediants:

  • 500g topside mince
  • Flour for coating
  • Oil for frying
  • 2 Tablespoons chopped fresh coriander Peanut Sauce:
  • 1 Tablespoon red curry paste
  • 2 Tablespoons crunchy peanut butter
  • 1 Tablespoon brown sugar, well packed
  • 1 Tablespoon lemon juice
  • 1 & 1/4 Cups coconut milk

Steps:

  1. Roll beef mince into small balls and coat lighlty in flour. Deep- or shallow-fry meatballs until golden brown and cooked through. Drain on absorbent paper.
  2. Peanut Sauce: Drain off most of oil from pan leaving about 1 tablespoon. Add curry paste and fry for 1 minute.
  3. Add all other ingrediants except coriander and bring to the boil. Add meatballs, lower heat and simmer for 5 minutes or until sauce has thickened. Sprinkle with coriander to serve.
