Thai Meatballs with Peanut Sauce
Ingrediants:
- 500g topside mince
- Flour for coating
- Oil for frying
- 2 Tablespoons chopped fresh coriander Peanut Sauce:
- 1 Tablespoon red curry paste
- 2 Tablespoons crunchy peanut butter
- 1 Tablespoon brown sugar, well packed
- 1 Tablespoon lemon juice
- 1 & 1/4 Cups coconut milk
Steps:
- Roll beef mince into small balls and coat lighlty in flour. Deep- or shallow-fry meatballs until golden brown and cooked through. Drain on absorbent paper.
- Peanut Sauce: Drain off most of oil from pan leaving about 1 tablespoon. Add curry paste and fry for 1 minute.
- Add all other ingrediants except coriander and bring to the boil. Add meatballs, lower heat and simmer for 5 minutes or until sauce has thickened. Sprinkle with coriander to serve.
